Mediterranean Chicken Orzo

A taste of the Mediterranean is only minutes away with this simple orzo and chicken pasta tossed with tomatoes, olives, basil, lemon juice, and grated Parmesan cheese.

Ingredients

    * 16 ounces orzo pasta
    * 2 (11 ounce) packages Tyson® Grilled and Ready™ Fully Cooked Grilled Chicken Breast Strips
    * 1/2 cup diced oil-packed sundried tomatoes
    * 1/2 cup halved, pitted Kalamata olives
    * 1/3 cup chopped fresh basil
    * 2 tablespoons fresh lemon juice
    * 2 tablespoons olive oil
    * 1/4 cup grated Parmesan cheese
    * 1 pinch salt and ground black pepper

Directions

   1. Cook orzo pasta according to package directions. Drain and transfer to a large bowl.
   2. Fold in chicken, sundried tomatoes, olives, basil, lemon juice, olive oil and Parmesan cheese.
   3. Season to taste with salt and ground black pepper.

    Orzo is great. Looks like rice but it's pasta. Extra bonus is that kids love it. This would be great with salami instead of chicken too, I think. Definitely a recipe even a non-cooking bloke could whip up!
  • Well we learn something everyday. I never knew orzo pasta existed until now. Would definitely give this one a try, although I'd lose the olives - yuck!

    I love that if you put a few leaves of pasley or basil on top of a pile of food and suddenly it looks like something from a flash restaurant. Tea was a disaster one night so I chucked it all on one plate and stuck a some basil on top and everyone thought it was amazing. Didnt tell them any different. lol.

    Nom nom awesome orzo - the best and most versatile pasta I've come across. We lived off pasta salads using orzo last summer and looking foward to a repeat experience this summer too. Orzo and crumbled feta is like a perfect wee food marriage too!
